Place a baking tray in the center rack of your oven. If using a convection oven (oven with fan) preheat to 400ºf, otherwise set oven to 430ºf. It is important the tray is properly heated to ensure an even cook.

Once preheated, place your Beef Wellington, including the parchment paper provided, onto your preheated baking tray and place back into the center rack of your oven.

Depending on your preferred temperature, bake according to the chart below. Rotate the tray after 30, minutes. We recommend medium rare. It is best to use a instant read thermometer to check its internal temperature. If you don’t have one, bake for 45 minutes for a medium rare.

Bake to a internal temperature of 110°f
After resting, temperature will rise to 130°f- 135°f

Bake to a internal temperature of 120°f
After resting, temperature will rise to 140°f-145°f

After resting, temperature will rise to 150°f-155°f

Once your Beef Wellington has reached its desired temperature, remove it from the oven and place it on a wire cooling rack to rest for a minimum of 30 minutes before slicing.

While your Beef Wellington is resting, heat up the provided beef jus by placing it in a small sauce pot over low heat until melted (roughly 2 minutes). Set aside.

To serve, slice your Beef Wellington into 4-6 equal slices. It is best to use a serrated bread knife to slice. Serve with a drizzle of beef jus.
